Barbecue Sauce Recipes - From Basic to Regional Variations

Trying different barbecue sauce recipes is one of the many enjoyable things about 'queing. And there are no "rules" when it comes to making your own sauce. This is evident by the many different kinds or "styles" of sauce that we see today.

There are tomato, mustard, and vinegar based sauces -- even mayonnaise based BBQ sauces. Barbecue sauce can also be regional.

You've got your Kansas City style, North and South Carolina style, Texas style, Memphis style (dry), and St. Louis style BBQ sauces and everything in between.

There are some specific ingredients that are "traditional" depending on where the sauce originates. For example, some Carolina style BBQ sauces are mustard-based, while vinegar and pepper influences others. Of course, you have your Kansas City style sauce which is tomato/ketchup based.

In addition to the above, there are "mop" sauces and dips. Mop sauces are thinner, often vinegar based sauces that you use for basting your meats with a little hand mop during cooking.

Below are a collection of recipes. Some are just modified versions of sauces I've tried over the years. Others are directly from other sources, which I cite next to the recipe title.

Before we get to the recipes, though, here's a little tip on cooking your barbecue sauces.

Cooking your sauces

The cooking process for all of these barbecue sauce recipes is pretty standard: Combine the ingredients in a pot, bring to a boil while stirring frequently so that the sauce doesn't burn or stick. Reduce heat and simmer for 30 to 45 minutes. Still keep an eye on the sauce as it simmers, stirring occasionally.

By the way, it's better to make your BBQ sauce a day or two before you'll be using it. This allows time for the ingredients to meld, giving your sauce a richer, more full-bodied flavor.

Barbecue Sauce Recipes

Basic BBQ Sauce

  • 2 cups ketchup
  • 1/2 cup brown sugar
  • 1/4 cup Worcestershire sauce
  • 1/4 cup apple cider vinegar
  • 1/4 cup molasses
  • 3 tablespoons prepared mustard
  • 1 tablespoon of your favorite barbecue rub
  • 2 teaspoons liquid smoke
  • 1 teaspoon cayenne

Basic BBQ Sauce II

  • 1 1/2 cup ketchup
  • 1/2 cup white sugar
  • 1/2 cup water
  • 1/4 cup cider vinegar
  • 2 tbsp Worcestershire sauce
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp black pepper

"IF" I'm going to brush a little BBQ sauce on my beef ribs, I'll use this. It's not too thick or sweet.

Kansas City Style BBQ Sauce (Meathead Goldwyn)

  • 2 tablespoons chili powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon table salt

  • 2 cups ketchup
  • 1/2 cup yellow ballpark-style mustard
  • 1/2 cup cider vinegar
  • 1/3 cup Worcestershire sauce
  • 1/4 cup lemon juice
  • 1/4 cup steak sauce
  • 1/4 cup dark molasses
  • 1/4 cup honey
  • 1 teaspoon hot sauce
  • 1 cup brown sugar

  • 3 tablespoons vegetable oil
  • 1 medium onion, finely chopped
  • 4 medium cloves of garlic, crushed or minced

Saute onions and garlic in vegetable oil and then combine with remaining ingredients in pot and cook as directed above.

South Carolina Mustard BBQ Sauce

  • 4 tbsp butter
  • 1/2 onion, grated
  • 1 cup yellow mustard
  • 1/2 cup brown sugar
  • 1/2 cup cider vinegar
  • 2 tbsp Worchestershire sauce
  • 1 tbsp dry mustard
  • 1 tbsp liquid smoke
  • 1 teaspoon cayenne

Saute onions in butter for a few minutes, then add to remaining ingredients and cook per instructions above.

Basic Mop Sauce for Pork Ribs

  • 1/2 cup apple cider vinegar
  • 1/2 cup apple juice
  • 1/4 cup vegetable oil
  • 1 tsp cayenne pepper

Note: Any mop sauce that contains sugar should be used for indirect cooking only. The sugar in the mop sauce could burn using direct heat.

    For Pork:
  • 3 tablespoons unsalted butter
  • 1 cup apple cider
  • 3 tablespoons bourbon, or 3 more tablespoons apple cider
  • 3 tablespoons soy sauce
    For Brisket:
  • 1 cup beer
  • 1 cup apple cider
  • 1 cup cider vinegar
  • 1 cup coffee
  • 1 cup beef or chicken stock
  • 1/4 cup vegetable oil
  • 1/4 cup Worcestershire sauce
  • 2 tablespoons hot sauce, (recommended: Tabasco sauce)
  • 2 teaspoons kosher or sea salt
  • 1 teaspoon freshly ground black pepper
